Stuffed Chicken Breasts with Sun Dried Tomatoes & Mozzarella

Inspired by this recipe, but I manipulated the ingredients to what I had in the fridge and it turned out more than delicious.

Ingredients:

4 pc Boneless Chicken Breasts
Sun-dried Tomatoes
Herbs: salt, pepper, basil, thyme
Mozarella
4 small slices of smoked turkey
Fresh Basil

Here are the steps:
  1.  Flatten the chicken breasts after slitting from the middle
  2.  Sprinkle Salt, Pepper and dried Basil
  3. Open the chicken breast and fill with Mozzarella, sun-dried tomatoes, & smoked Turkey
  4. Close up the chicken breast and fry in cooking oil on both sides for 3 min on each side.
  5. Pre-heat the oven at 6 Gas Mark
  6. Prep a skillet with olive oil and thyme at the bottom of it
  7. Place the chicken breast in the skillet and sprinkle with olive oil, thyme, fresh basil and mozzarella on top.
  8. Bake for about 20 min (till cooked)


--I served with red sauce Pasta. It was a perfect meal for the weekend. yum...
